Turkey burgers are often overlooked as dry and dull. But this turkey burger, adapted from Dorie Greenspan, is loaded with flavor. Plus Dorie’s trick of searing the burgers on the stove and then finishing in the oven will give you a perfectly cooked and never dry burger.

  • Ground meat: Ground turkey is more flavorful than ground chicken (though you can substitute ground chicken). The mild flavored turkey is a perfect canvas for taking on strong flavor additions
  • Flavors: This turkey burger uses freshly grated ginger, scallions, cilantro, and sriracha sauce to give the burgers big flavor
  • Binder: Many turkey burger recipes rely on binders like breadcrumbs and mayo. Though moist, these turkey burgers end up with a texture more similar to crab cakes than burgers. That’s not always a bad thing, but if I’m in the mood for a burger, I want the texture of a burger. My turkey burgers use only egg as binder. After forming the patties, a quick chill in the fridge (30 min – up to 1 day) also helps to hold the burgers together.
  • Cooking: You could cook these on the stove, in the oven, or on the grill. To prevent the burgers from drying out I like to start cooking them on the stove, getting a good sear on each side, then transfer them to the oven to finish off cooking.
  • Toppings: Add more big flavors with sriracha mayo, kimchi, cilantro.

Ingredients

  • 3 inch piece of ginger peeled and grated
  • 3 scallions trimmed and chopped
  • ¼ c cilantro chopped
  • 1 egg lightly beaten
  • 1 tsp sriracha or garlic chili sauce
  • 1 tsp fine sea salt
  • 1 lb ground turkey
  • 2 tbsp olive oil for cooking

for serving

  • 4 buns toasted
  • 1 recipe sriracha mayo (see below)
  • ½ c kimchi chopped
  • ¼ c cilantro chopped

Instructions

  • In a large bowl, combine ginger, scallions, cilantro, egg, sriracha, and salt. Mix well with a fork. Add turkey and mix until just blended. Form the mixture into 4 burgers. Place burgers on a plate and refrigerate 30 minutes or up to 1 day.
  • Preheat oven to 375°F and line baking sheet with parchment paper or aluminum foil.
  • Heat oil in large skillet over medium-high heat. Once hot add the burgers to the skillet. Cook until browned on both sides, about 5 minutes per side. Transfer burgers to baking sheet and finish cooking in the oven for 15-20 minutes or until the internal temperature reaches 165°F.
  • Serve burgers on toasted buns topped with a dollop of sriracha mayo, kimchi, and cilantro.

This quick and easy sauce is a delicious addition to anything in need of extra zip. Try in on grain bowls, salads, or seared proteins.

  • 2 tbsp sriracha
  • ¼ mayo
  • 2 tsp apple cider vinegar
  • large pinch of salt

Instructions

  • In small bowl combine all ingredients and mix well.
