Spring has finally sprung! Plants are sprouting up all around and inspiring me to incorporate more sprouts into my diet. This vegetarian sandwich with sprouts and pickled carrots is the veggie sandwich of my dreams! I was vegetarian for many years, and vegetarian sandwiches were the bane of my existence. They were always too mushy or moist and never very flavorful. But this veggie sandwich has everything that makes a great sandwich- a mix of textures, bright and fresh flavors, and easily adaptable.
sandwich components
- bread: Multigrain bread is my favorite for this recipe. It has that healthy, nutty, wholesome vibe that works with all the veggies.
- spreadable layer: I love goat cheese for the tang, but my partner prefers cream cheese. Hummus, vegan cream cheese, or mashed avocado are all great alternatives to keep the sandwich vegan.
- sprouts: Sprouts are this sandwich’s star! We like close to 1/2 an inch of sprouts per sandwich.
- pickled carrots: Pickles adds crunch and brightness! Follow our guide to quick pickling any type of vegetable to make your own. Store-bought pickled or fermented carrots are great too. If you don’t have any pickled carrots, shredded carrots mixed with a little salt and light vinegar gives similar texture and flavor.
- additional veggies: Sliced cucumber, mashed up avocado, sliced red onion, or tomato would be welcome additions.
- optional protein: Sliced seitan or turkey breast are both delicious.

Ingredients
- 2 slices multigrain bread
- 2 tbsp goat cheese or cream cheese see note for vegan alternatives
- 1 large handful sprouts
- 1 small handful pickled carrots or shredded carrots
- optional protein or veggies seitan, turkey breast, cucumber, red onion, tomato, or avocado
Instructions
- Spread the goat or cream cheese onto both slices of bread.
- Arrange pickled carrots, sprouts, and any optional protein or veggies on top of the cheese layer. Close sandwich and enjoy.
